You Will Need:

  • 8 oz cream cheese, softened

  • 1 egg, beaten (for egg wash)


Instructions:

  1. Preheat the Oven:
    Set your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease if desired.

  2. Prepare the Filling:
    In a mixing bowl, stir together the softened cream cheese and crumbled feta until well combined and creamy. Add the chopped dried cranberries and mix until evenly distributed.

  3. Assemble the Pinwheels:
    On a lightly floured surface, unfold one sheet of puff pastry. Spread half of the cheese and cranberry mixture evenly over the surface, leaving a 1/2-inch border along the edges. Layer with a handful of spinach or arugula over the cheese.

    Starting from one long side, gently roll the puff pastry into a tight log. Pinch the edge to seal, then place seam-side down. Repeat with the second sheet.

  5. Slice & Brush:
    Using a sharp knife, slice each log into 1/2 to 3/4-inch pinwheels. Arrange them on the prepared baking sheet, spacing them slightly apart. Brush the tops with beaten egg for a golden finish.

  6. Bake:
    Bake for 18–22 minutes, or until puffed and golden brown. Keep an eye near the end to avoid over-browning.

  7. Cool & Serve:
    Allow the pinwheels to cool slightly before serving warm or at room temperature. Perfect with a light dipping sauce or served as-is!
