3. Strain the Curds:
Line a colander with a clean cheesecloth or thin kitchen towel and place it over a large bowl. Gently pour the mixture through the cloth, letting the whey drain out. Allow to drain for 5–10 minutes depending on your preferred texture.

4. Rinse and Squeeze:
Rinse the curds under cool water to remove the acidic flavor. Gather the cloth and squeeze out any remaining liquid for drier curds or leave a bit for creamier results.

5. Season and Finish:
Transfer the curds to a clean bowl. Add salt to taste and stir in a spoonful or two of cream or milk if you prefer a richer, smoother cottage cheese.
