Virginia’s Fresh Apple Cake

 

A moist, flavorful cake filled with fresh apples, warm spices, raisins, coconut, and pecans. Soft on the inside with a perfectly tender crumb — this classic recipe delivers comforting homemade flavor in every bite. Simple, timeless, and always delicious.

Ingredients

1½ cups oil

2 cups sugar

3 cups all-purpose flour

2 large eggs

1½ teaspoons baking soda

1 teaspoon salt

2 teaspoons vanilla extract

1 cup white raisins

1 cup chopped pecans

3 cups chopped fresh apples

½ cup shredded coconut

½ cup red cherries, chopped

⅛ teaspoon cloves

⅛ teaspoon nutmeg

Instructions

1. Prepare the batter

In a large mixing bowl, combine oil and sugar until well blended. Add eggs one at a time, followed by vanilla, and mix until smooth.

2. Combine dry ingredients

In a separate bowl, whisk together flour, baking soda, salt, cinnamon, cloves, and nutmeg.

3. Mix everything together

Gradually add the dry ingredients to the wet mixture, stirring until fully combined.

Fold in the apples, raisins, pecans, coconut, and cherries until evenly distributed.

 

4. Bake

Pour the batter into a greased 9×13-inch pan or Bundt pan.

Bake at 325°F (165°C) for 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.

5. Cool and serve

Allow the cake to cool in the pan before slicing. Serve plain, dusted with powdered sugar, or with a light glaze if desired.
