Introduction

Raspberry Cream Mousse is a light, smooth, and refreshing dessert with a beautiful pink color and a sweet fruity flavor. It is easy to prepare and perfect for summer days, family gatherings, parties, or a quick chilled dessert after dinner.

Ingredients

  • 2 cups fresh or frozen raspberries
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup cream cheese or Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 packet gelatin or 2 teaspoons powdered gelatin
  • 3 tablespoons cold water
  • Fresh raspberries for decoration

Preparation

Place the raspberries, sugar, and lemon juice in a small saucepan. Cook over medium heat for 5–7 minutes, stirring often, until the raspberries become soft and release their juice.

Blend the raspberry mixture until smooth, then strain it through a fine sieve to remove the seeds. Let the raspberry sauce cool completely.

In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes. Warm it gently until dissolved, then mix it into the cooled raspberry sauce.

In a large bowl, beat the heavy cream until soft peaks form. In another bowl, mix the cream cheese or Greek yogurt with vanilla extract until smooth.

Add the raspberry sauce to the cream cheese mixture and stir well. Gently fold in the whipped cream until the mousse becomes light, fluffy, and evenly pink.

Spoon the mousse into serving bowls or one large dish. Cover and refrigerate for at least 3–4 hours until firm and creamy.

Serve chilled with fresh raspberries on top. You can also add whipped cream, white chocolate shavings, crushed cookies, or mint leaves for decoration.
