Poor Man’s Stew

Poor Man’s Stew is a hearty, budget-friendly comfort meal made with ground beef, potatoes, carrots, and tomatoes simmered in a rich, flavorful broth. It’s an easy one-pot recipe that’s perfect for busy weeknights and feeds the whole family.
Ingredients
1 pound ground beef
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
4 medium potatoes, peeled and cubed
3 medium carrots, sliced
1 can (14.5 ounces) diced tomatoes
3 cups beef broth
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
1 teaspoon Italian seasoning
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Preparation Steps
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, then stir in the garlic.
Add the ground beef and cook until browned, breaking it into small pieces. Drain any excess grease if needed.
Stir in the tomato paste, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper.
Add the diced tomatoes, beef broth, potatoes, and carrots. Stir everything together.
Bring the stew to a gentle boil, then reduce the heat to low. Cover and simmer for 30–35 minutes, or until the potatoes and carrots are tender.
Taste and adjust the seasoning if needed. Stir in the chopped parsley just before serving.
Ladle the stew into bowls and serve hot.

Serve with warm crusty bread or buttery biscuits to soak up every bit of the rich, savory broth.
