Classic Windmill Cookies

These nostalgic spiced cookies are crisp, buttery, and full of warm cinnamon flavor. Their signature windmill shape makes them a timeless favorite to enjoy with a cup of coffee or tea.
Ingredients
2 1/4 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 tablespoon milk (if needed)
Preparation Steps
In a bowl, whisk together the flour, cinnamon, nutmeg, cloves, and salt.
In a separate bowl, beat the butter and brown sugar until light and fluffy.
Mix in the egg and vanilla extract until fully combined.
Gradually add the dry ingredients, mixing until a smooth dough forms. If the dough is too dry, add the milk.
Wrap the dough and chill for at least 1 hour.
Preheat the oven to 350°F (175°C).
Roll the dough to about 1/8-inch thickness and cut with a windmill cookie cutter or your favorite cookie cutter.
Arrange the cookies on a parchment-lined baking sheet and bake for 10–12 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Serving Tip
Store the cookies in an airtight container for up to one week. They pair perfectly with coffee, hot tea, or a glass of cold milk.
