Ingredients
1 1/2 pounds beef sirloin, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons butter
8 ounces mushrooms, sliced
1 small onion, finely diced
2 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 cup sour cream
Salt and black pepper, to taste
12 ounces egg noodles
Fresh parsley, chopped, for garnish
Preparation Steps
Cook the egg noodles according to the package directions. Drain, toss with a little butter if desired, and set aside.
Heat the olive oil in a large skillet over medium-high heat. Season the beef with salt and pepper, then sear for 2–3 minutes until browned. Remove the beef and set aside.
In the same skillet, melt the butter. Add the onions and mushrooms, cooking until softened and lightly browned. Stir in the garlic and cook for another 30 seconds.
Sprinkle the flour over the vegetables and stir well. Gradually whisk in the beef broth until smooth.
Add the Worcestershire sauce and Dijon mustard. Let the sauce simmer for 5–7 minutes until slightly thickened.
Reduce the heat to low and stir in the sour cream until the sauce is creamy and smooth. Do not allow it to boil.
Return the cooked beef to the skillet and simmer gently for 2–3 minutes, just until heated through.
Serve the beef stroganoff over the warm egg noodles and garnish with freshly chopped parsley.
