Prepare the Parmesan dough one hour before preparing the meat. In your food processor (you can also use a hand mixer, a large wooden spoon, or a spatula), blend the grated Parmesan cheese, melted butter, and panko breadcrumbs until well combined. Roll the mixture on wax paper or parchment paper. Go around the tree and twist the ends closed. Refrigerate for 45 minutes until the oil hardens.

Season each piece with salt and pepper.
Heat a large frying pan or cast iron skillet over high heat. Place the chicken in the pan and fry for two minutes on each side.
Once the chicken is cooked, place it in the oven and bake for another 8-10 minutes or until the chicken is *almost* cooked and reaches the desired temperature. Use a meat thermometer to check the doneness of each dish.
Remove Parmesan rind mixture from refrigerator and cut into wedges for each batch. Note: You do not use all the Parmesan cheese. Cut off what you want to use and save the rest for another day.
Sprinkle Parmesan cheese over each steak. Turn the grill to medium-high and broil until the crust is golden brown. To enjoy!
