Lemon-Green Chicken-Potato Casserole is something everyone has had at some point and is perfect for cold nights. This delicious casserole is reminiscent of my mother’s favorite winter dishes that she prepares when the days are short and the winds pick up. This dish is perfect for those days when you want to treat your family to a homemade, nutritious meal with a hint of lemon zest and herbs. You’ll understand why this has become a habit in our house when the casserole comes out of the oven golden and fragrant.

This delicious masterpiece can sit on a plate by itself, but you can also try it with green beans or a mixed green salad with vinaigrette as a colorful side dish. To add a touch of decadence, garlic bread is delicious with a rich sauce.

Four skinless and boneless chicken breasts, diced
– Three cups peeled and drained red potatoes – One lemon, squeezed and drained – Three cloves of garlic
Three tablespoons dried herbs: thyme, rosemary and olive oil
– Crushed pepper, 1/2 teaspoon

Two cups of chicken broth and one cup of cream should be used.
1/2 cup grated Parmesan cheese
Garnish with fresh parsley, if desired; Flavour with salt and blackpepper.

What to do
To start, preheat the oven to 190 degrees Celsius and lightly brush a medium-sized baking dish with olive oil.
Second: Mix lemon juice, zest, olive oil, garlic powder, thyme, rosemary, paprika, salt and pepper in a large bowl. Add the mashed potatoes and chicken pieces and coat well with the spice mixture.

3. Arrange the chicken and potatoes in the prepared baking dish.
4. Add the chicken broth and heavy cream to the potatoes and chicken, then gently invert the pan to drain.
5. Then sprinkle grated Parmesan cheese on top and cover with aluminum foil.

6. Close the lid and place in the preheated oven for 30 minutes. After the potatoes are soft and the chicken is cooked, remove the foil and bake for another 20-25 minutes.

After removing the bowl from the oven, let it sit for a few more minutes. If you wish, sprinkle chopped parsley and serve hot to your loved ones.

Other Tips and Tricks – If you want to reduce the acidity or use lemon juice for those who don’t like lemon, you can increase the amount of chicken broth and decrease the lemon juice.
– If there is someone in your home who does not like rosary and thyme, do not hesitate to use different herbs. A little Italian seasoning would be nice here too!

– Adding extra veggies like peppers, broccoli, or carrots can make this a meal and is an easy way to eat more veggies.
– If you’re trying to reduce your dairy intake, try using non-dairy heavy creams and skipping the cheese or replacing it with plant-based cheese.
