Real Beef Enchiladas Recipe
Ingredients:
1 kilo of ground meat
1 small onion, finely chopped
2 cloves of garlic, finely chopped
1 teaspoon of ground cumin
1 teaspoon of chili powder
1/2 teaspoon of dried thyme
Salt and black pepper to taste
1. Directions:
Preheat oven to 350°F. Grease a 9×13 baking pan.
Cook the ground beef in a large skillet over medium heat until brown and cooked through. Drain off excess oil if necessary.
Add the chopped onion and garlic to the pan and cooked meat. Cook for another 2-3 minutes until the onion is soft and tender.
Add ground cumin, red pepper powder, dried thyme, salt and pepper and mix. Cook for another minute until the spices are fragrant.
Pour half of the enchilada sauce into the pan with the beef mixture. Add the vegetables. Mix well and let it boil for a few minutes.
Microwave corn for 30 seconds or until soft and fluffy.
Spoon half of the beef mixture onto each tortilla and sprinkle with cheddar cheese. Lift the tortillas and place them on one side of the prepared plate.
Pour remaining enchilada sauce over tortilla rolls and coat evenly.
Sprinkle grated cheddar cheese over the enchiladas.
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
Remove the enchiladas from the oven and let them cool for a few minutes before serving.
Garnish with freshly chopped coriander, diced tomatoes, black olives and a dollop of sour cream, if desired.
