Homemade Pineapple Soft Serve Ice Cream

 

Ingredients:

  • 1 ripe pineapple, peeled, cored, and cut into chunks
  • 1/2 cup coconut milk (or any milk of your choice)
  • 2 tablespoons honey or maple syrup (optional, for added sweetness)
  • 1 tablespoon lemon juice (optional, for added brightness)
  • Fresh mint leaves (for garnish, optional)

Instructions:

  1. Prepare the Pineapple:
    • Peel and Core: Start by peeling and coring a ripe pineapple. Cut it into chunks. If you want a smoother texture, make sure the chunks are relatively small and even.
    • Freeze the Pineapple: Spread the pineapple chunks in a single layer on a baking sheet lined with parchment paper. Place the baking sheet in the freezer and freeze the pineapple until solid, at least 2-3 hours or overnight for best results.
  2. Blend the Ingredients:
    • Add to Blender: Once the pineapple chunks are frozen, transfer them to a high-speed blender or food processor. Add the coconut milk (or your preferred milk), honey or maple syrup (if using), and lemon juice (if using).
    • Blend: Blend the mixture until smooth and creamy. You may need to stop and scrape down the sides of the blender or food processor a few times to ensure everything is evenly blended. If the mixture is too thick to blend, you can add a bit more milk, one tablespoon at a time, until you reach the desired consistency.
  3. Serve Immediately:
    • Texture Check: Once the mixture is smooth and creamy, it should have a soft-serve ice cream consistency. If it’s too soft, you can place it in the freezer for about 30 minutes to firm up slightly before serving.
    • Garnish: Scoop the pineapple soft serve into bowls or cones. Garnish with fresh mint leaves if desired.
  4. Store Leftovers:
    • Freeze: If you have any leftovers, transfer the soft serve to an airtight container and store it in the freezer. When you’re ready to eat it again, let it sit at room temperature for about 10-15 minutes to soften before scooping.
