Cheesy Beef and Potato Bake
Ingredients:
- 4 large potatoes, peeled and sliced into thin rounds
- 1 lb (450 g) ground beef
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz/400 g) diced tomatoes, drained
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Potatoes:
- Peel and slice the potatoes into thin rounds.
- Place the potato slices in a large pot of salted water and bring to a boil. Cook for about 5 minutes until slightly tender. Drain and set aside.
- Cook the Ground Beef:
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute.
- Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the diced tomatoes, tomato paste, beef broth, paprika, cumin, oregano, salt, and black pepper.
- Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
- Assemble the Dish:
- In a greased 9×13-inch baking dish, layer half of the potato slices.
- Spoon half of the beef mixture over the potatoes.
- Sprinkle half of the shredded cheddar and mozzarella cheese over the beef.
- Repeat the layers with the remaining potatoes, beef mixture, and cheese.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.
- Serve:
- Let the dish cool for a few minutes before serving.
- Garnish with fresh parsley if desired.
- Serve hot and enjoy!
