Cream-Filled Doughnuts with Strawberry Jam
Ingredients:
- For the Doughnuts:
- 3 1/2 cups all-purpose flour
- 2 teaspoons active dry yeast
- 1/2 cup warm milk (110°F/45°C)
- 1/2 cup warm water (110°F/45°C)
- 1/4 cup sugar
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup unsalted butter, melted
- Vegetable oil for frying
- For the Filling:
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup strawberry jam
- For Dusting:
- Powdered sugar
Instructions:
- Prepare the Dough:
- In a small bowl, dissolve the yeast in the warm water and milk. Let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the eggs, melted butter, and yeast mixture.
- Mix until the dough comes together, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
- Shape the Doughnuts:
- Punch down the risen dough and roll it out on a floured surface to about 1/2-inch thickness.
- Use a round cutter to cut out doughnut shapes. Place them on a baking sheet lined with parchment paper, cover, and let them rise for another 30-45 minutes until puffy.
- Fry the Doughnuts:
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry the doughnuts a few at a time, turning them over when they are golden brown on one side. This should take about 1-2 minutes per side.
- Remove the doughnuts with a slotted spoon and drain on paper towels. Let them cool completely.
- Prepare the Filling:
- In a large mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Assemble the Doughnuts:
- Once the doughnuts are cooled, cut them in half horizontally.
- Spread a layer of strawberry jam on the bottom half of each doughnut.
- Pipe or spoon the whipped cream over the jam.
- Place the top half of the doughnut back on and dust with powdered sugar.
