Sweet Fluffy Milk Bread
Ingredients:
For the Tangzhong (Water Roux):
- 3 tablespoons bread flour
- 1/2 cup water
- 1/2 cup milk
For the Bread Dough:
- 2 1/2 cups bread flour
- 2 tablespoons milk powder
- 1/4 cup sugar
- 1 teaspoon salt
- 2 teaspoons instant yeast
- 1/2 cup milk, warm
- 1 large egg, beaten
- 1/4 cup unsalted butter, softened
For the Glaze:
- 2 tablespoons melted butter
- 1/4 cup condensed milk
Instructions:
- Prepare the Tangzhong:
- In a small saucepan, whisk together the bread flour, water, and milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and forms a paste (about 3-5 minutes).
- Remove from heat and let it cool to room temperature.
- Make the Dough:
- In a large mixing bowl, combine the bread flour, milk powder, sugar, salt, and instant yeast.
- Add the warm milk, beaten egg, and the cooled tangzhong.
- Mix until the dough comes together, then knead for about 5 minutes.
- Add the softened butter and continue kneading for another 10-15 minutes, or until the dough is smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Shape the Bread:
- Punch down the dough to release the air.
- Divide the dough into 6 equal portions and shape each portion into a ball.
- Roll each ball into an oval shape, then fold the shorter ends towards the center.
- Roll up the dough tightly into a log and place them seam-side down in a greased loaf pan.
- Cover with a damp cloth and let it rise again for about 45 minutes, or until doubled in size.
- Bake the Bread:
- Preheat your oven to 350°F (175°C).
- Brush the top of the dough with a beaten egg for a glossy finish.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and the bread sounds hollow when tapped.
- Add the Glaze:
- Mix the melted butter and condensed milk in a small bowl.
- Brush the hot bread with the glaze immediately after removing it from the oven.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve:
- Slice the bread and enjoy its soft, fluffy texture with your favorite spread or as it is.
