Chocolate Peanut Butter Tart
Ingredients:
For the Crust:
- 2 cups chocolate cookie crumbs (such as Oreos, finely crushed)
- 1/2 cup melted butter
For the Peanut Butter Filling:
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped
For the Chocolate Ganache:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are fully coated.
- Press the mixture evenly into the bottom and up the sides of a tart pan.
- Refrigerate for at least 30 minutes to set.
- Prepare the Peanut Butter Filling:
- In a large mixing bowl, combine the peanut butter, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Gently fold in the whipped cream until the mixture is light and fluffy.
- Spread the peanut butter filling evenly over the chilled crust.
- Prepare the Chocolate Ganache:
- In a microwave-safe bowl, combine the chocolate chips and heavy cream.
- Microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and the mixture is smooth.
- Let the ganache cool slightly before pouring it over the peanut butter filling.
- Assemble the Tart:
- Pour the chocolate ganache over the peanut butter layer, spreading it evenly with a spatula.
- Refrigerate the tart for at least 2 hours, or until the ganache is set.
- Serve:
- Slice and serve chilled.
- Optionally, garnish with additional chocolate shavings or a drizzle of melted peanut butter for an extra touch.
