Cheesy Stuffed Flatbread

Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast
  • 3/4 cup warm water
  • 2 tablespoons olive oil

For the Filling:

  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh parsley (optional)

For Cooking:

  • 2 tablespoons unsalted butter, melted
  • Olive oil or additional melted butter for brushing

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, salt, sugar, and instant yeast.
    • Add the warm water and olive oil to the dry ingredients and mix until a dough forms.
    • Knead the dough on a lightly floured surface for about 5-7 minutes, until it becomes smooth and elastic.
    • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  2. Prepare the Filling:
    • In a medium bowl, combine the shredded mozzarella, crumbled feta, shredded cheddar, and chopped parsley (if using). Mix well.
  3. Assemble the Flatbread:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Punch down the risen dough and divide it into 2 equal portions.
    • Roll out one portion of dough on a lightly floured surface into a large circle, about 1/4 inch thick.
    • Spread half of the cheese mixture evenly over the dough, leaving a small border around the edges.
    • Roll out the second portion of dough into a similar-sized circle and place it over the cheese-covered dough.
    • Press the edges together to seal the flatbread.
  4. Cook the Flatbread:
    • Heat a large skillet or griddle over medium heat and brush it with olive oil or melted butter.
    • Carefully transfer the assembled flatbread to the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
    • Brush the top of the cooked flatbread with melted butter.
  5. Bake the Flatbread:
    • Transfer the cooked flatbread to the prepared baking sheet.
    • Bake in the preheated oven for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Remove the flatbread from the oven and let it cool slightly before slicing.
    • Serve the cheesy stuffed flatbread warm, garnished with additional parsley if desired.
