Raisin Pound Cake

Ingredients:

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 1/2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1 cup raisins
  • 2 tablespoons flour (for coating the raisins)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 325°F (165°C). Grease and flour a bundt or tube pan.
  2. Prepare the Raisins:
    • In a small bowl, toss the raisins with 2 tablespoons of flour to coat them. This will help prevent them from sinking to the bottom of the cake.
  3. Make the Batter:
    • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  4. Fold in Raisins:
    • Gently fold the coated raisins into the batter.
  5. Bake the Cake:
    • Pour the batter into the prepared pan, spreading it evenly.
    • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
  6. Serve:
    • Once the cake is completely cool, slice and serve. You can dust the cake with powdered sugar for an extra touch.
