Crispy Roasted Potatoes

 

Ingredients:

  • 2 lbs (about 1 kg) potatoes, peeled and cut into chunks
  • 1/4 cup olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Prepare the Potatoes:
    • Place the peeled and cut potatoes in a large pot of salted water.
    • Bring to a boil and cook for about 5-7 minutes until they are just starting to become tender but not fully cooked.
    • Drain the potatoes and let them cool slightly.
  3. Season the Potatoes:
    • In a large mixing bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, and dried thyme (if using).
    • Add the slightly cooled potatoes to the bowl and toss until they are evenly coated with the seasoning mixture.
  4. Roast the Potatoes:
    • Spread the seasoned potatoes in a single layer on the prepared baking sheet.
    • Roast in the preheated oven for about 30-40 minutes, turning them halfway through, until they are golden brown and crispy on the outside.
  5. Garnish and Serve:
    • Remove the roasted potatoes from the oven and transfer them to a serving bowl.
    • Garnish with freshly chopped parsley.
