Crispy Roasted Potatoes
Ingredients:
- 2 lbs (about 1 kg) potatoes, peeled and cut into chunks
 - 1/4 cup olive oil
 - 2 teaspoons garlic powder
 - 1 teaspoon paprika
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1/2 teaspoon dried thyme (optional)
 - Fresh parsley, chopped (for garnish)
 
Instructions:
- Preheat the Oven:
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
 
 - Prepare the Potatoes:
- Place the peeled and cut potatoes in a large pot of salted water.
 - Bring to a boil and cook for about 5-7 minutes until they are just starting to become tender but not fully cooked.
 - Drain the potatoes and let them cool slightly.
 
 - Season the Potatoes:
- In a large mixing bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, and dried thyme (if using).
 - Add the slightly cooled potatoes to the bowl and toss until they are evenly coated with the seasoning mixture.
 
 - Roast the Potatoes:
- Spread the seasoned potatoes in a single layer on the prepared baking sheet.
 - Roast in the preheated oven for about 30-40 minutes, turning them halfway through, until they are golden brown and crispy on the outside.
 
 - Garnish and Serve:
- Remove the roasted potatoes from the oven and transfer them to a serving bowl.
 - Garnish with freshly chopped parsley.
