Custard Slices (Mille-Feuille)
Ingredients:
For the Pastry:
- 1 package of puff pastry (2 sheets)
- Powdered sugar (for dusting)
For the Custard:
- 4 cups whole milk
- 1 cup granulated sugar
- 1/2 cup cornstarch
- 6 large egg yolks
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter
For the Assembly:
- Powdered sugar (for dusting)
Instructions:
- Prepare the Pastry:
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry sheets on a lightly floured surface to smooth them out.
- Place the sheets on a baking tray lined with parchment paper. Prick the pastry all over with a fork to prevent it from puffing too much.
- Place another piece of parchment paper on top of the pastry and another baking tray on top to weigh it down.
- Bake in the preheated oven for 15-20 minutes until golden brown and crisp.
- Remove from the oven and let cool completely. Once cooled, cut each sheet into equal-sized rectangles or squares to fit your serving dish.
- Prepare the Custard:
- In a medium saucepan, combine the milk and half of the sugar. Heat over medium heat until it starts to simmer.
- In a separate bowl, whisk together the remaining sugar, cornstarch, and egg yolks until smooth.
- Gradually pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens and comes to a boil.
- Remove from heat and stir in the vanilla extract, salt, and butter until smooth.
- Pour the custard into a bowl, cover with plastic wrap touching the surface to prevent a skin from forming, and let it cool to room temperature.
- Assemble the Slices:
- Place one layer of the puff pastry at the bottom of your serving dish.
- Spread the cooled custard evenly over the pastry layer.
- Top with the second layer of puff pastry.
- Refrigerate for at least 2 hours to set.
- Serve:
- Dust the top with powdered sugar before serving.
- Cut into squares or rectangles and enjoy your homemade custard slices.
