Creamy Almond Cake Recipe

 

Ingredients:

For the Cake Base:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt

For the Creamy Filling:

  • 2 cups milk
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

For the Topping:

  • 1/2 cup sliced almonds
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, melted

Instructions:

  1. Prepare the Cake Base:
    • Preheat your oven to 350°F (175°C). Grease a springform pan.
    • In a bowl, mix the flour, sugar, baking powder, and salt. Add the chilled butter and rub it in with your fingers until the mixture resembles coarse crumbs.
    • Add the egg and vanilla extract. Mix until a dough forms.
    • Press the dough evenly into the bottom of the prepared springform pan. Set aside.
  2. Prepare the Creamy Filling:
    • In a saucepan, combine the milk, sugar, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens.
    • In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper them.
    • Pour the tempered egg yolks back into the saucepan with the remaining milk mixture. Cook for an additional 2-3 minutes, stirring constantly, until thickened.
    • Remove from heat and stir in the vanilla extract. Let the mixture cool slightly.
    • Once cooled, fold in the heavy cream.
  3. Assemble the Cake:
    • Pour the creamy filling over the cake base in the springform pan.
    • In a small bowl, mix the sliced almonds, sugar, and melted butter. Sprinkle this mixture evenly over the top of the creamy filling.
  4. Bake:
    • Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the filling is set.
  5. Cool and Serve:
    • Allow the cake to cool completely in the pan before removing the sides of the springform pan.
    • Dust with powdered sugar if desired.
    • Slice and serve.
