Vegetable Croquettes Recipe
Ingredients:
- 2 medium zucchinis, grated
- 2 medium potatoes, peeled and grated
- 2 large carrots, peeled and grated
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
- Olive oil for frying
Instructions:
- Prepare the Vegetables:
- Place the grated zucchini, grated potatoes, and grated carrots in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the croquettes are not soggy.
- Mix the Ingredients:
- In a large bowl, combine the grated zucchini, grated potatoes, grated carrots, chopped onion, minced garlic, flour, breadcrumbs, grated Parmesan cheese, beaten eggs, chopped parsley, and chopped dill. Season with salt and pepper to taste. Mix well until all the ingredients are evenly combined.
- Shape the Croquettes:
- Take a handful of the mixture and shape it into a small log or oval shape. Repeat with the remaining mixture.
- Heat the Oil:
- In a large skillet, heat a generous amount of olive oil over medium-high heat.
- Fry the Croquettes:
- Carefully place the vegetable croquettes in the hot oil. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy. You may need to do this in batches to avoid overcrowding the skillet.
- Drain and Serve:
