Creamy Coconut Curry Salmon”

 

Ingredients:

For the Salmon:

  • 4 salmon fillets (about 6 ounces each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Coconut Curry Sauce:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Fresh basil, chopped (for garnish)

Equipment:

  • Large skillet
  • Stirring spoon

Instructions:

  1. Prepare the Salmon:
    • Season the salmon fillets with salt and pepper.
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Add the salmon fillets, skin-side down, and sear until the skin is crisp, about 3-4 minutes.
    • Flip the fillets and cook for an additional 3-4 minutes or until the salmon is cooked to your liking.
    • Remove the salmon from the skillet and set aside.
  2. Make the Coconut Curry Sauce:
    • In the same skillet, add 1 tablespoon of olive oil. Reduce the heat to medium.
    • Add the chopped onion and sauté until soft and translucent, about 5 minutes.
    • Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
    • Stir in the curry powder and cook for about 30 seconds.
    • Pour in the coconut milk and add the tomato paste and sugar. Stir well to combine all ingredients.
    • Bring the sauce to a simmer and let it cook for about 5 minutes, or until it begins to thicken.
    • Season with salt and pepper to taste.
  3. Combine Salmon and Sauce:
    • Return the salmon fillets to the skillet, spooning the sauce over them.
    • Let everything simmer together for a few minutes until the salmon is heated through and has absorbed some of the sauce flavors.
  4. Serve:
    • Serve the salmon fillets on a bed of white rice, generously spooning over the coconut curry sauce.
    • Garnish with chopped cilantro and basil.
    • Serve hot.
