Creamy Coconut Curry Salmon”
Ingredients:
For the Salmon:
- 4 salmon fillets (about 6 ounces each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
For the Coconut Curry Sauce:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 can (14 ounces) coconut milk
- 1 tablespoon tomato paste
- 1 teaspoon sugar
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Fresh basil, chopped (for garnish)

- Large skillet
- Stirring spoon
Instructions:
- Prepare the Salmon:
- Season the salmon fillets with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the salmon fillets, skin-side down, and sear until the skin is crisp, about 3-4 minutes.
- Flip the fillets and cook for an additional 3-4 minutes or until the salmon is cooked to your liking.
- Remove the salmon from the skillet and set aside.
- Make the Coconut Curry Sauce:
- In the same skillet, add 1 tablespoon of olive oil. Reduce the heat to medium.
- Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Stir in the curry powder and cook for about 30 seconds.
- Pour in the coconut milk and add the tomato paste and sugar. Stir well to combine all ingredients.
- Bring the sauce to a simmer and let it cook for about 5 minutes, or until it begins to thicken.
- Season with salt and pepper to taste.
- Combine Salmon and Sauce:
- Return the salmon fillets to the skillet, spooning the sauce over them.
- Let everything simmer together for a few minutes until the salmon is heated through and has absorbed some of the sauce flavors.
- Serve:
- Serve the salmon fillets on a bed of white rice, generously spooning over the coconut curry sauce.
- Garnish with chopped cilantro and basil.
- Serve hot.
