“Classic Steak with Creamy Peppercorn Sauce”
Ingredients:
For the Steak:
- 2 steaks (such as ribeye, sirloin, or filet mignon), about 1 inch thick
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
For the Creamy Peppercorn Sauce:
- 1 tablespoon whole black peppercorns, crushed
- 1 small shallot, finely chopped
- 1 clove garlic, minced
- 1/4 cup brandy or cognac (optional)
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt, to taste
- Fresh parsley, chopped (for garnish)

Instructions:
- Prepare the Steak:
- Remove the steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. Season generously with salt and pepper.
- Heat olive oil in a cast iron skillet over high heat until very hot. Add the steaks and cook for about 3-4 minutes per side for medium-rare, or longer depending on the desired doneness.
- Remove the steaks from the skillet and let them rest while you make the sauce.

- Reduce the heat to medium and add the shallot and garlic to the same skillet. Sauté until softened, about 2 minutes.
- Add the crushed peppercorns and cook for another minute.
- Carefully add the brandy or cognac (if using) to deglaze the pan, scraping up any browned bits from the steak. Allow the alcohol to cook off, about 1 minute.
- Stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Bring the mixture to a simmer and cook until the sauce thickens enough to coat the back of a spoon, about 3-4 minutes.
- Season the sauce with salt to taste.
- Serve:
- Slice the rested steaks against the grain and arrange them on plates.
- Spoon the creamy peppercorn sauce over the steaks.
- Garnish with chopped parsley and additional freshly ground black pepper.
