“Classic Steak with Creamy Peppercorn Sauce”

Ingredients:

For the Steak:

  • 2 steaks (such as ribeye, sirloin, or filet mignon), about 1 inch thick
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil

For the Creamy Peppercorn Sauce:

  • 1 tablespoon whole black peppercorns, crushed
  • 1 small shallot, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup brandy or cognac (optional)
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Equipment:

  • Skillet (preferably cast iron)
  • Measuring spoons and cups
  • Knife and chopping board

Instructions:

  1. Prepare the Steak:
    • Remove the steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. Season generously with salt and pepper.
    • Heat olive oil in a cast iron skillet over high heat until very hot. Add the steaks and cook for about 3-4 minutes per side for medium-rare, or longer depending on the desired doneness.
    • Remove the steaks from the skillet and let them rest while you make the sauce.
  2. Make the Creamy Peppercorn Sauce:
    • Reduce the heat to medium and add the shallot and garlic to the same skillet. Sauté until softened, about 2 minutes.
    • Add the crushed peppercorns and cook for another minute.
    • Carefully add the brandy or cognac (if using) to deglaze the pan, scraping up any browned bits from the steak. Allow the alcohol to cook off, about 1 minute.
    • Stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Bring the mixture to a simmer and cook until the sauce thickens enough to coat the back of a spoon, about 3-4 minutes.
    • Season the sauce with salt to taste.
  3. Serve:
    • Slice the rested steaks against the grain and arrange them on plates.
    • Spoon the creamy peppercorn sauce over the steaks.
    • Garnish with chopped parsley and additional freshly ground black pepper.
