Ingredients:

  • 10 chicken drumsticks
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon paprika
  • 1 teaspoon smoked chili powder
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, whisk together olive oil, garlic, soy sauce, ketchup, honey, apple cider vinegar, paprika, smoked chili powder, salt, and pepper.
    • Add the chicken drumsticks to the marinade and toss to coat evenly.
    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for the flavors to meld.
  2. Preheat the Grill:
    • Preheat your grill to medium-high heat. If you’re using a charcoal grill, wait until the coals are uniformly ashed over.
  3. Grill the Chicken:
    • Remove the chicken from the marinade, letting excess drip off. Place the drumsticks on the grill.
    • Grill the chicken, turning every 5 minutes, until the meat is cooked through and the skin is crispy, about 25-30 minutes. An instant-read thermometer should read 165°F (74°C) when inserted into the thickest part of a drumstick.
  4. Serve:
    • Transfer the grilled drumsticks to a platter and let them rest for a few minutes.
    • Garnish with freshly chopped herbs before serving.
