Zucchini and Cheese Casserole Recipe
Ingredients:
- 4 medium zucchinis, thinly sliced
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/2 cup bread crumbs
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Prepare the Vegetables:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the sliced zucchinis to the skillet and cook until they start to soften, about 5-7 minutes. Season with salt, pepper, dried basil, and dried oregano. Remove from heat and let it cool slightly.
- Prepare the Egg Mixture:
- In a large mixing bowl, whisk together the eggs, milk, and heavy cream. Stir in the grated Parmesan cheese.
- Assemble the Casserole:
- Spread half of the zucchini mixture evenly in the prepared baking dish.
- Sprinkle half of the shredded mozzarella and cheddar cheeses over the zucchini.
- Pour half of the egg mixture over the cheese.
- Repeat the layers with the remaining zucchini mixture, cheeses, and egg mixture.
- Sprinkle the bread crumbs evenly over the top of the casserole.
- Bake the Casserole:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the casserole is set.
- Serve:
- Remove from the oven and let the casserole cool for a few minutes before slicing and serving.
