Zucchini and Cheese Casserole Recipe

 

Ingredients:

  • 4 medium zucchinis, thinly sliced
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup bread crumbs
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Prepare the Vegetables:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
    • Add the sliced zucchinis to the skillet and cook until they start to soften, about 5-7 minutes. Season with salt, pepper, dried basil, and dried oregano. Remove from heat and let it cool slightly.
  3. Prepare the Egg Mixture:
    • In a large mixing bowl, whisk together the eggs, milk, and heavy cream. Stir in the grated Parmesan cheese.
  4. Assemble the Casserole:
    • Spread half of the zucchini mixture evenly in the prepared baking dish.
    • Sprinkle half of the shredded mozzarella and cheddar cheeses over the zucchini.
    • Pour half of the egg mixture over the cheese.
    • Repeat the layers with the remaining zucchini mixture, cheeses, and egg mixture.
    • Sprinkle the bread crumbs evenly over the top of the casserole.
  5. Bake the Casserole:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
    • Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the casserole is set.
  6. Serve:
    • Remove from the oven and let the casserole cool for a few minutes before slicing and serving.
