Classic Potato Salad

 

Ingredients:

  • 2 pounds Yukon gold potatoes
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup red onion, finely diced
  • 1/2 cup celery, finely diced
  • 1/2 cup dill pickles, finely diced
  • 4 hard-boiled eggs, chopped
  • 1/4 cup fresh parsley, chopped (optional)
  • 1/4 teaspoon paprika (for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Wash and peel the potatoes. Cut them into bite-sized chunks.
    • Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
    • Bring to a boil and cook until the potatoes are fork-tender, about 10-15 minutes.
    • Drain the potatoes and let them cool slightly.
  2. Prepare the Dressing:
    • In a large mixing bowl, whisk together the mayonnaise, yellow mustard, apple cider vinegar, sugar, salt, and black pepper until well combined.
  3. Assemble the Potato Salad:
    • Add the cooled potatoes to the dressing.
    • Gently fold in the red onion, celery, dill pickles, and chopped hard-boiled eggs.
    • Mix until all ingredients are well coated with the dressing.
  4. Chill and Serve:
    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld together.
    • Before serving, sprinkle with chopped fresh parsley and a pinch of paprika for garnish.
  5. Optional Add-ins:
    • For extra flavor, consider adding chopped fresh herbs like dill or chives.
    • For a bit of crunch, you can add some diced bell peppers.
