Moist Vanilla Cake with Caramel Glaze
Ingredients:
For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
For the Caramel Glaze:
- 1 cup light brown sugar, packed
- 1/2 cup unsalted butter
- 1/4 cup whole milk
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Prepare the Cake:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- Prepare the Caramel Glaze:
- In a medium saucepan, combine the light brown sugar, unsalted butter, and whole milk.
- Cook over medium heat, stirring constantly, until the mixture comes to a boil.
- Continue to cook for 2-3 minutes, or until the glaze thickens slightly.
- Remove from heat and stir in the vanilla extract and a pinch of salt.
- Glaze the Cake:
- Once the cake has cooled, poke holes all over the top of the cake using a skewer or the handle of a wooden spoon.
- Pour the warm caramel glaze over the top of the cake, spreading it out evenly to cover the entire surface.
- Allow the glaze to set for at least 30 minutes before serving.
- Serve:
- Cut the cake into squares and serve.
