Moist Vanilla Cake with Caramel Glaze

 

Ingredients:

For the Cake:
  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
For the Caramel Glaze:
  • 1 cup light brown sugar, packed
  • 1/2 cup unsalted butter
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×13-inch baking pan.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract.
    • Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
    • Pour the batter into the prepared baking pan and spread it evenly.
    • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool completely in the pan on a wire rack.
  2. Prepare the Caramel Glaze:
    • In a medium saucepan, combine the light brown sugar, unsalted butter, and whole milk.
    • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
    • Continue to cook for 2-3 minutes, or until the glaze thickens slightly.
    • Remove from heat and stir in the vanilla extract and a pinch of salt.
  3. Glaze the Cake:
    • Once the cake has cooled, poke holes all over the top of the cake using a skewer or the handle of a wooden spoon.
    • Pour the warm caramel glaze over the top of the cake, spreading it out evenly to cover the entire surface.
    • Allow the glaze to set for at least 30 minutes before serving.
  4. Serve:
    • Cut the cake into squares and serve.
