Grilled Lamb Chops

 

Ingredients:

  • 8 lamb chops, about 1-inch thick
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Zest and juice of 1 lemon
  • Salt and black pepper, to taste
  • Optional garnish: lemon wedges and fresh herbs

Instructions:

  1. Marinate the Lamb Chops:
    • In a bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, lemon zest, lemon juice, salt, and black pepper.
    • Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the lamb chops, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
  2. Preheat the Grill:
    • Preheat your grill to medium-high heat (about 400-450°F).
  3. Grill the Lamb Chops:
    • Remove the lamb chops from the marinade and let any excess drip off. Discard the remaining marinade.
    • Place the lamb chops on the preheated grill. Grill for about 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness. Use a meat thermometer to check the internal temperature: 130°F for medium-rare, 140°F for medium, and 150°F for well-done.
  4. Rest the Lamb Chops:
    • Remove the lamb chops from the grill and let them rest for about 5 minutes. This allows the juices to redistribute throughout the meat, making it more tender and flavorful.
  5. Serve:
    • Arrange the lamb chops on a serving platter. Garnish with lemon wedges and fresh herbs if desired.
  6. Enjoy:
    • Serve the grilled lamb chops with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
