Citrus Glazed Salmon

 

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon orange zest
  • 1 teaspoon lemon zest
  • 3 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • Slices of orange and lemon (for garnish)

Instructions:

  1. Prepare the Salmon:
    • Season the salmon fillets with salt and black pepper on both sides.
  2. Make the Glaze:
    • In a small bowl, mix together the honey, soy sauce, fresh orange juice, lemon juice, orange zest, lemon zest, minced garlic, and red pepper flakes (if using).
  3. Cook the Salmon:
    • Heat the olive oil and butter in a large skillet over medium-high heat.
    • Add the salmon fillets to the skillet, skin-side up, and cook for about 4-5 minutes on each side, or until the salmon is just cooked through and has a nice golden crust. Remove the salmon from the skillet and set aside.
  4. Add the Glaze:
    • Pour the glaze mixture into the same skillet and bring to a simmer. Cook for about 2-3 minutes, or until the glaze thickens slightly.
  5. Glaze the Salmon:
    • Return the salmon fillets to the skillet and spoon the glaze over the top. Continue to cook for another 2-3 minutes, basting the salmon with the glaze, until the salmon is fully cooked and well coated with the glaze.
  6. Serve:
    • Transfer the glazed salmon to serving plates.
    • Garnish with fresh parsley and slices of orange and lemon.
    • Serve immediately, perhaps with a side of steamed vegetables or rice.
