Citrus Glazed Salmon
Ingredients:
- 4 salmon fillets (about 6 oz each)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons fresh orange juice
- 1 tablespoon lemon juice
- 1 teaspoon orange zest
- 1 teaspoon lemon zest
- 3 garlic cloves, minced
- 1/2 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Slices of orange and lemon (for garnish)
Instructions:
- Prepare the Salmon:
- Season the salmon fillets with salt and black pepper on both sides.
- Make the Glaze:
- In a small bowl, mix together the honey, soy sauce, fresh orange juice, lemon juice, orange zest, lemon zest, minced garlic, and red pepper flakes (if using).
- Cook the Salmon:
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Add the salmon fillets to the skillet, skin-side up, and cook for about 4-5 minutes on each side, or until the salmon is just cooked through and has a nice golden crust. Remove the salmon from the skillet and set aside.
- Add the Glaze:
- Pour the glaze mixture into the same skillet and bring to a simmer. Cook for about 2-3 minutes, or until the glaze thickens slightly.
- Glaze the Salmon:
- Return the salmon fillets to the skillet and spoon the glaze over the top. Continue to cook for another 2-3 minutes, basting the salmon with the glaze, until the salmon is fully cooked and well coated with the glaze.
- Serve:
- Transfer the glazed salmon to serving plates.
- Garnish with fresh parsley and slices of orange and lemon.
- Serve immediately, perhaps with a side of steamed vegetables or rice.
