Pineapple Teriyaki Glazed Salmon
Ingredients:
- 2 salmon fillets
- 1 cup fresh pineapple chunks
- 1/4 cup soy sauce
- 1/4 cup pineapple juice (or orange juice)
- 3 tablespoons brown sugar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 tablespoons chopped fresh cilantro or parsley
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
- Prepare the Teriyaki Sauce: In a small saucepan, combine soy sauce, pineapple juice, brown sugar, honey, minced garlic, and grated ginger. Bring to a simmer over medium heat, stirring occasionally.
- Thicken the Sauce: In a small bowl, mix the cornstarch and water to make a slurry. Slowly add the slurry to the saucepan, stirring constantly, until the sauce thickens. Remove from heat and set aside.
- Season the Salmon: Season the salmon fillets with salt and pepper.
- Cook the Salmon: Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
- Glaze the Salmon: In the last minute of cooking, brush the salmon fillets with the teriyaki sauce.
- Prepare the Pineapple Topping: In a separate small pan, briefly sauté the pineapple chunks until they are warmed through and slightly caramelized.
- Serve: Place the glazed salmon fillets on a serving plate. Top with the sautéed pineapple chunks and sprinkle with chopped cilantro or parsley.
- Enjoy: Serve immediately with additional teriyaki sauce on the side if desired.
