Crispy Fried Chicken
Ingredients:
For the Chicken:
- 6 chicken drumsticks (or any preferred chicken pieces)
- 2 cups buttermilk
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional, for heat)
For the Breading:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon baking powder
For Frying:
- Vegetable oil for frying
Instructions:
- Marinate the Chicken:
- In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
- Add the chicken pieces, ensuring they are fully submerged in the buttermilk mixture. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Prepare the Breading:
- In a large shallow dish, combine the flour, salt, black pepper, paprika, garlic powder, onion powder, and baking powder. Mix well.
- Bread the Chicken:
- Remove the chicken pieces from the buttermilk marinade, allowing any excess to drip off.
- Dredge each piece of chicken in the seasoned flour mixture, pressing the flour onto the chicken to ensure it adheres well. Place the breaded chicken on a wire rack and let it sit for about 10-15 minutes to set the breading.
- Heat the Oil:
- In a large, deep skillet or Dutch oven, heat about 2-3 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the temperature.
- Fry the Chicken:
- Carefully place a few pieces of chicken in the hot oil, being careful not to overcrowd the pan. Fry in batches if necessary.
- Fry the chicken for about 12-15 minutes, turning occasionally, until golden brown and crispy. The internal temperature should reach 165°F (75°C).
- Drain and Serve:
- Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain any excess oil.
- Allow the chicken to rest for a few minutes before serving.
