Crispy Fried Chicken

 

Ingredients:

For the Chicken:

  • 6 chicken drumsticks (or any preferred chicken pieces)
  • 2 cups buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional, for heat)

For the Breading:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon baking powder

For Frying:

  • Vegetable oil for frying

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
    • Add the chicken pieces, ensuring they are fully submerged in the buttermilk mixture. Cover and refrigerate for at least 2 hours, or overnight for best results.
  2. Prepare the Breading:
    • In a large shallow dish, combine the flour, salt, black pepper, paprika, garlic powder, onion powder, and baking powder. Mix well.
  3. Bread the Chicken:
    • Remove the chicken pieces from the buttermilk marinade, allowing any excess to drip off.
    • Dredge each piece of chicken in the seasoned flour mixture, pressing the flour onto the chicken to ensure it adheres well. Place the breaded chicken on a wire rack and let it sit for about 10-15 minutes to set the breading.
  4. Heat the Oil:
    • In a large, deep skillet or Dutch oven, heat about 2-3 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the temperature.
  5. Fry the Chicken:
    • Carefully place a few pieces of chicken in the hot oil, being careful not to overcrowd the pan. Fry in batches if necessary.
    • Fry the chicken for about 12-15 minutes, turning occasionally, until golden brown and crispy. The internal temperature should reach 165°F (75°C).
  6. Drain and Serve:
    • Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain any excess oil.
    • Allow the chicken to rest for a few minutes before serving.
