No-Bake Peach Cheesecake Bars
Ingredients:
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
For the Peach Topping:
- 1 can (15 oz) peach slices, drained and chopped (reserve a few slices for garnish)
- 1/4 cup peach preserves or jelly
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.
- Press the crumb mixture firmly into the bottom of a 9×13-inch baking dish to form an even layer.
- Place the crust in the refrigerator to set while you prepare the filling.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the powdered sugar and vanilla extract, and continue to beat until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined and smooth.
- Assemble the Cheesecake Bars:
- Spread the cheesecake filling evenly over the prepared crust in the baking dish.
- Arrange the chopped peach slices evenly over the cheesecake filling.
- Prepare the Peach Topping:
- In a small saucepan, warm the peach preserves or jelly over low heat until it becomes slightly liquefied.
- Brush the peach preserves over the chopped peaches to give them a glossy finish.
- Chill and Serve:
- Place the assembled cheesecake bars in the refrigerator to chill for at least 4 hours, or overnight, until firm.
- Once set, cut the cheesecake into bars and garnish with reserved peach slices if desired.
