Pineapple Parfait with Whipped Cream

 

Ingredients:

For the Pineapple Layer:

  • 2 cups fresh pineapple, diced (or canned pineapple, drained)
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

For the Whipped Cream:

  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For Garnish:

  • Toasted coconut flakes
  • Maraschino cherries
  • Fresh mint leaves (optional)

Instructions:

  1. Prepare the Pineapple Layer:
    • In a medium saucepan, combine the diced pineapple, granulated sugar, and lemon juice.
    • Cook over medium heat, stirring occasionally, until the pineapple is soft and the mixture has thickened slightly, about 10-15 minutes.
    • Remove from heat and let it cool completely.
  2. Prepare the Whipped Cream:
    • In a large mixing bowl, beat the heavy whipping cream with an electric mixer on medium-high speed until it starts to thicken.
    • Add the powdered sugar and vanilla extract, and continue to beat until stiff peaks form. Be careful not to overbeat.
  3. Assemble the Parfaits:
    • In serving glasses, layer the pineapple mixture and whipped cream alternately, starting with a layer of pineapple at the bottom.
    • Continue layering until the glasses are filled, ending with a layer of whipped cream on top.
  4. Garnish and Serve:
    • Sprinkle the top with toasted coconut flakes.
    • Add a maraschino cherry and a fresh mint leaf on top for garnish.

Serve immediately and enjoy your refreshing pineapple parfaits!
