Cheesy Beef and Potato Roll

 

Ingredients:

For the Filling:

  • 1 lb (450g) ground beef
  • 2 medium potatoes, peeled and grated
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped

For the Dough:

  • 1 package puff pastry (2 sheets), thawed
  • 1 egg, beaten (for egg wash)
  • Additional shredded cheese for topping

Instructions:

  1. Prepare the Filling:
    • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and cook for another 1 minute until fragrant.
    • Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
    • Stir in the grated potatoes, paprika, dried oregano, salt, and pepper. Cook for another 5-7 minutes until the potatoes are tender. Remove from heat and let it cool slightly.
    • Once cooled, mix in the shredded cheese and chopped parsley.
  2. Assemble the Roll:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
    • Roll out one sheet of puff pastry on a lightly floured surface to smooth out any creases.
    • Spread half of the beef and potato filling evenly over the puff pastry, leaving about an inch border on all sides.
    • Roll up the pastry tightly, starting from one of the long sides, and place it seam-side down on the prepared baking sheet.
    • Repeat the process with the second sheet of puff pastry and the remaining filling.
  3. Bake the Roll:
    • Brush the tops of the rolls with the beaten egg. Sprinkle additional shredded cheese on top.
    • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
  4. Serve:
    • Allow the rolls to cool for a few minutes before slicing. Garnish with additional chopped parsley if desired.
    • Serve warm and enjoy!

Tips:

  • You can customize the filling by adding other vegetables like bell peppers or carrots.
  • For a spicier version, add some red pepper flakes or hot sauce to the filling.
