Traditional Castella Cake

 

Ingredients:

  • 1/2 cup (120 ml) milk
  • 2 tablespoons honey
  • 1/2 cup (120 g) unsalted butter
  • 1 cup (120 g) bread flour
  • 6 large eggs
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (60 ml) water
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 320°F (160°C).
    • Line a 9×5 inch loaf pan with parchment paper, extending the paper over the edges for easy removal.
  2. Heat Milk and Honey:
    • In a small saucepan, heat the milk and honey over low heat until warm. Remove from heat and set aside.
  3. Melt Butter:
    • In another small saucepan, melt the butter over low heat. Once melted, set aside to cool slightly.
  4. Prepare Dry Ingredients:
    • Sift the bread flour into a bowl to remove any lumps.
  5. Beat Eggs and Sugar:
    • In a large mixing bowl, beat the eggs and sugar together with an electric mixer on high speed until thick and pale, about 5 minutes.
  6. Add Wet Ingredients:
    • Gradually add the warm milk and honey mixture, melted butter, water, salt, and vanilla extract to the beaten eggs and sugar. Mix on low speed until just combined.
  7. Fold in Flour:
    • Gently fold the sifted flour into the batter with a spatula, being careful not to deflate the mixture.
  8. Pour into Pan:
    • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake the Cake:
    • Bake in the preheated oven for 60-70 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
    • If the top starts to brown too quickly, cover it loosely with aluminum foil.
  10. Cool the Cake:
    • Remove the cake from the oven and let it cool in the pan for about 10 minutes.
    • Lift the cake out of the pan using the parchment paper and transfer it to a wire rack to cool completely.
  11. Serve:
    • Once the cake is completely cool, cut it into thick slices and serve.
