Creamy Shrimp and Tortellini Pasta Recipe
Ingredients:
- 1 lb (450g) shrimp, peeled and deveined
- 1 package (9 oz/250g) cheese tortellini
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (optional)
Instructions:
- Cook the Tortellini:
- Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions. Drain and set aside.
- Cook the Shrimp:
- In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook until they are pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- Pour in the white wine (if using) and chicken broth, and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly.
- Stir in the heavy cream and bring to a gentle simmer. Cook for 3-4 minutes until the sauce thickens slightly.
- Add the grated Parmesan cheese, lemon juice, and lemon zest. Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
- Combine Everything:
- Add the cooked tortellini and shrimp to the skillet, tossing to coat them in the creamy sauce.
- Cook for another 2-3 minutes until everything is heated through.
- Serve:
- Garnish with chopped fresh parsley, if desired.
- Serve the creamy shrimp and tortellini pasta immediately.
