Ingredients:

  • 4 cups fresh corn kernels (or canned/frozen corn, drained)
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1/2 cup diced red onion
  • 1 cup diced cherry tomatoes
  • 1/2 cup sliced jalapeño peppers (optional, adjust to taste)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Vegetables:
    • In a large bowl, combine the corn kernels, red bell pepper, green bell pepper, red onion, cherry tomatoes, jalapeño peppers (if using), and chopped cilantro.
  2. Make the Dressing:
    • In a small bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar, ground cumin, salt, and black pepper.
  3. Combine and Toss:
    • Pour the dressing over the vegetable mixture. Toss everything together until the vegetables are well coated with the dressing.
  4. Chill and Serve:
    • Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
    • Serve the fresh corn and vegetable salad chilled.
