Stuffed Crepes with Spinach and Ricotta

 

Ingredients:

For the Crepes:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 1 tablespoon melted butter
  • 1/4 teaspoon salt
  • Extra butter for cooking

For the Filling:

  • 2 cups ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 garlic clove, minced
  • Salt and pepper to taste

For the Sauce:

  • 2 cups heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Prepare the Crepes:
    • In a large mixing bowl, whisk together the flour and salt. In another bowl, whisk together the eggs and milk.
    • Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Stir in the melted butter.
    • Heat a non-stick skillet over medium heat and lightly coat with butter. Pour about 1/4 cup of the batter into the skillet and swirl to coat the bottom evenly.
    • Cook for about 2 minutes, or until the edges start to lift and the bottom is golden brown. Flip and cook for another minute. Repeat with the remaining batter.
  2. Prepare the Filling:
    • In a mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, beaten egg, minced garlic, salt, and pepper. Mix until well combined.
  3. Assemble the Crepes:
    • Preheat your oven to 350°F (175°C).
    • Lay a crepe on a flat surface and spread about 2-3 tablespoons of the filling in the center. Roll up the crepe and place it seam-side down in a baking dish.
    • Repeat with the remaining crepes and filling, arranging them in a single layer in the baking dish.
  4. Prepare the Sauce:
    • In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Stir in the mozzarella and Parmesan cheese until melted and smooth.
    • Season with salt and pepper to taste.
  5. Bake the Crepes:
    • Pour the cream sauce over the stuffed crepes in the baking dish, making sure they are well covered.
    • Bake in the preheated oven for 20-25 minutes, or until the sauce is bubbly and the top is golden brown.
  6. Serve:
    • Allow the crepes to cool for a few minutes before serving. They can be enjoyed as a main dish or a hearty side.
