No-Bake Cherry Cheesecake

 

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz (2 packages) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

For the Topping:

  • 1 can (21 oz) cherry pie filling

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs and granulated sugar.
    • Stir in the melted butter until the mixture is well combined and resembles wet sand.
    • Press the mixture firmly into the bottom of a 9-inch springform pan or a pie dish to form an even crust.
    • Refrigerate the crust while you prepare the filling.
  2. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add the powdered sugar and vanilla extract, and continue beating until well combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth.
  3. Assemble the Cheesecake:
    • Spread the cheesecake filling evenly over the prepared crust.
    • Smooth the top with a spatula.
    • Refrigerate the cheesecake for at least 4 hours, or until set.
  4. Add the Cherry Topping:
    • Once the cheesecake is set, spread the cherry pie filling evenly over the top of the cheesecake.
  5. Serve:
    • Slice and serve the cheesecake chilled. Enjoy!
