Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs (about 12 full graham crackers)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cream Layer:

  • 8 oz (225g) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (like Cool Whip) or whipped cream

For the Peach Layer:

  • 4 cups fresh peaches, peeled and sliced (or canned peaches, drained)
  • 1/4 cup granulated sugar (if using fresh peaches)
  • 1 tablespoon cornstarch (optional, for thickening fresh peach juice)
  • 1 tablespoon lemon juice

For the Topping:

  • 2 cups whipped topping or whipped cream
  • Crushed graham crackers or cookie crumbs for garnish
  • Fresh mint leaves (optional, for garnish)

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture is well combined and resembles wet sand.
    • Press the crumb mixture evenly into the bottom of a 9×13-inch (23×33 cm) baking dish. Place in the refrigerator to chill while you prepare the other layers.
  2. Prepare the Cream Layer:
    • In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • Fold in the whipped topping or whipped cream until fully combined.
    • Spread the cream layer evenly over the chilled crust. Return to the refrigerator to set while you prepare the peaches.
  3. Prepare the Peach Layer:
    • If using fresh peaches, combine the sliced peaches with granulated sugar, cornstarch (if using), and lemon juice in a medium saucepan. Cook over medium heat, stirring frequently, until the peaches are softened and the mixture thickens slightly. Allow to cool before layering.
    • If using canned peaches, simply drain them well and slice them if necessary.
  4. Assemble the Dessert:
    • Once the cream layer has set, layer the cooled peach mixture evenly over the top.
    • Spread the remaining whipped topping or whipped cream over the peach layer.
  5. Garnish and Chill:
    • Sprinkle crushed graham crackers or cookie crumbs over the top for added texture and garnish with fresh mint leaves if desired.
    • Refrigerate the dessert for at least 2 hours, or until fully set.
  6. Serve:
    • Slice the Peach Delight into squares and serve chilled.

This dessert is a crowd-pleaser, combining the sweetness of peaches with the creamy layers and the crunch of the graham cracker crust. It’s perfect for summer gatherings or as a light, refreshing treat.
