Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup dried cherries or maraschino cherries, chopped and drained

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Cream the Butter and Sugars:
    • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  4. Add the Wet Ingredients:
    • Beat in the egg and vanilla extract until well combined.
  5. Combine with Dry Ingredients:
    • Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  6. Fold in the Mix-Ins:
    • Gently fold in the chocolate chips and chopped cherries until evenly distributed throughout the dough.
  7. Shape the Cookies:
    • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake the Cookies:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still look slightly underdone, but they will continue to set as they cool.
    • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
