- Prepare the Crust:
- Preheat your oven to 325°F (163°C).
 - In a medium bowl, mix the graham cracker crumbs, sugar, melted butter, and cocoa powder (if using) until well combined.
 - Press the mixture evenly into the bottom of a 9-inch springform pan.
 - Bake the crust for 10 minutes, then remove from the oven and let it cool.

 - Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
 - Add the sugar and beat until combined.
 - Add the sour cream, vanilla extract, and lemon zest (if using), and mix until smooth.
 - Add the eggs one at a time, mixing on low speed after each addition just until blended.
 - Pour the cheesecake batter over the cooled crust in the springform pan.

 - Bake the Cheesecake:
- Place the cheesecake on the middle rack of the oven. You can place a shallow pan of water on the rack below to help prevent cracking.
 - Bake for 55-70 minutes, or until the center is almost set (it should still have a slight jiggle).
 - Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour.
 - Remove the cheesecake from the oven and let it cool completely at room temperature. Then refrigerate for at least 4 hours, or overnight.

 - Add the Topping:
- Before serving, top the cheesecake with fresh raspberries and pieces of chocolate.
 - Garnish with chocolate shavings or grated chocolate.

 - Serve:
- Carefully remove the cheesecake from the springform pan and place it on a serving plate.
 - Slice with a clean, sharp knife, wiping the knife clean between each cut for neat slices.

This classic cheesecake is rich and creamy, with the fresh raspberries and chocolate adding a delicious contrast in flavor and texture. It’s a perfect dessert for any special occasion. Enjoy!
