Classic New York-Style Cheesecake with Raspberry and Chocolate Topping

 

Ingredients:

For the Crust:

  • Graham cracker crumbs: 1 1/2 cups (about 10 full crackers)
  • Sugar: 1/4 cup
  • Butter: 1/2 cup (1 stick), melted
  • Cocoa powder: 2 tablespoons (optional, for a chocolate crust)

For the Cheesecake Filling:

  • Cream cheese: 4 (8 oz) packages, softened
  • Sugar: 1 cup
  • Sour cream: 1 cup
  • Vanilla extract: 1 teaspoon
  • Eggs: 4 large
  • Lemon zest: 1 teaspoon (optional, for a hint of citrus)

For the Topping:

  • Fresh raspberries: 1 cup
  • Chocolate (dark or milk): 2 oz, chopped or in pieces
  • Chocolate shavings or grated chocolate: For garnish

  1. Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • In a medium bowl, mix the graham cracker crumbs, sugar, melted butter, and cocoa powder (if using) until well combined.
    • Press the mixture evenly into the bottom of a 9-inch springform pan.
    • Bake the crust for 10 minutes, then remove from the oven and let it cool.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add the sugar and beat until combined.
    • Add the sour cream, vanilla extract, and lemon zest (if using), and mix until smooth.
    • Add the eggs one at a time, mixing on low speed after each addition just until blended.
    • Pour the cheesecake batter over the cooled crust in the springform pan.
  3. Bake the Cheesecake:
    • Place the cheesecake on the middle rack of the oven. You can place a shallow pan of water on the rack below to help prevent cracking.
    • Bake for 55-70 minutes, or until the center is almost set (it should still have a slight jiggle).
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour.
    • Remove the cheesecake from the oven and let it cool completely at room temperature. Then refrigerate for at least 4 hours, or overnight.
  4. Add the Topping:
    • Before serving, top the cheesecake with fresh raspberries and pieces of chocolate.
    • Garnish with chocolate shavings or grated chocolate.
  5. Serve:
    • Carefully remove the cheesecake from the springform pan and place it on a serving plate.
    • Slice with a clean, sharp knife, wiping the knife clean between each cut for neat slices.
