Ingredients

- 3/4 cup unsalted butter, softened

- 1 tsp almond extract
- 1/2 cup milk
- 1/2 cup almond flakes (plus extra for topping)
Instructions
- Preheat oven and prepare the pan:
- Preheat your oven to 350°F (175°C).
- Grease and line a loaf pan with parchment paper.
- Mix dry ingredients:
- In a medium bowl, sift together flour, baking powder, and salt.
- Cream butter and sugar:
- In a large bowl, beat the butter and sugar until pale and fluffy.
- Add eggs and almond extract:
- Add the eggs one at a time, beating well after each addition.
- Stir in the almond extract.
- Combine dry and wet ingredients:
- Alternately add the flour mixture and milk to the butter mixture, starting and ending with the flour. Mix until just combined.
- Fold in the almond flakes.
- Bake the cake:
- Pour the batter into the prepared pan and smooth the top.
- Sprinkle additional almond flakes over the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and serve:
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
