Ingredients

  • For the cake:
    • 1 3/4 cups all-purpose flour
    • 1 tsp baking powder
    • 1/4 tsp salt
    • 3/4 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1 tsp almond extract
    • 1/2 cup milk
    • 1/2 cup almond flakes (plus extra for topping)

Instructions

  1. Preheat oven and prepare the pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and line a loaf pan with parchment paper.
  2. Mix dry ingredients:
    • In a medium bowl, sift together flour, baking powder, and salt.
  3. Cream butter and sugar:
    • In a large bowl, beat the butter and sugar until pale and fluffy.
  4. Add eggs and almond extract:
    • Add the eggs one at a time, beating well after each addition.
    • Stir in the almond extract.
  5. Combine dry and wet ingredients:
    • Alternately add the flour mixture and milk to the butter mixture, starting and ending with the flour. Mix until just combined.
    • Fold in the almond flakes.
  6. Bake the cake:
    • Pour the batter into the prepared pan and smooth the top.
    • Sprinkle additional almond flakes over the top.
    • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and serve:
    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
