Instructions:

  1. Blend Oats (Optional):
    • For a smoother texture, blend the rolled oats in a blender or food processor until they resemble a coarse flour. This step is optional; you can use whole oats for a heartier texture.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, combine the blended oats (or whole rolled oats), flour, sugar (if using), baking powder, and salt.
  3. Add Wet Ingredients:
    • In another bowl, beat the eggs and then mix in the milk, melted butter (or oil), and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter sit for a few minutes to thicken slightly.
  4. Cook the Pancakes:
    • Heat a skillet or griddle over medium heat and brush with a little butter or oil.
    • Pour 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
