Luscious Lime Drizzle Bundt Cake

 

Ingredients:

  • Cake:
    • 2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 1 1/2 cups granulated sugar
    • 4 large eggs
    • 2 tablespoons lime zest (from about 3 limes)
    • 1/4 cup fresh lime juice
    • 1/4 cup milk
  • Lime Drizzle:
    • 1/2 cup granulated sugar
    • 1/3 cup fresh lime juice
  • Icing Glaze:
    • 1 cup powdered sugar
    • 2-3 tablespoons lime juice (adjust for desired consistency)
    • Extra lime zest for garnish

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a bundt cake pan thoroughly to ensure the cake releases easily.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar:
    • In a large bowl, beat the softened butter and sugar together until light and fluffy.
    • Add eggs one at a time, fully incorporating each before adding the next.
    • Mix in the lime zest and lime juice.
  4. Combine with Dry Ingredients:
    • Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.

    • Pour the batter into the prepared bundt pan.

    • While the cake is baking, combine 1/2 cup sugar with 1/3 cup lime juice in a small saucepan.
    • Heat over low until the sugar dissolves and the mixture is clear.
  7. Drizzle Over Hot Cake:
    • Once the cake is done, remove from the oven and while still hot, poke holes all over the top using a skewer.
    • Slowly pour the lime drizzle over the cake, allowing it to soak in.
  8. Cool and Glaze:
    • Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
    • Once cooled, whisk together powdered sugar and lime juice to make the icing glaze.
