Introduction:

  • 1 1/2 pounds flank steak, thinly sliced against the grain
  • 2 tablespoons soy sauce (for marinating the steak)

  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, cut into wedges
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • For the Sauce:
    • 1/4 cup soy sauce
    • 2 tablespoons oyster sauce
    • 1 tablespoon brown sugar
    • 1/2 cup beef broth or water
    • 1 teaspoon cornstarch

Instructions:

  1. Marinate the Steak:
    • Combine the thinly sliced steak with 2 tablespoons of soy sauce and 1 teaspoon of cornstarch. Let it marinate for at least 15 minutes while you prepare the other ingredients.
  2. Prepare the Sauce:
    • In a small bowl, mix together the soy sauce, oyster sauce, brown sugar, beef broth, and cornstarch. Set aside.
  3. Cook the Vegetables:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
    • Add the bell peppers and onion, stir-frying until they are just tender but still crisp, about 3-4 minutes. Remove the vegetables from the skillet and set aside.
  4. Stir-Fry the Steak:
    • In the same skillet, add the remaining tablespoon of oil.
    • Add the marinated steak and spread it out as much as possible. Sear without moving for about 1 minute to get a good char, then stir-fry for another 1-2 minutes until nearly cooked through.
    • Add the garlic and ginger, and stir-fry for an additional minute until fragrant.
  5. Combine and Simmer:
    • Return the vegetables to the skillet with the steak.
    • Pour the sauce over the top, stirring well to combine. Cook for another 2-3 minutes until the sauce has thickened and everything is heated through.
