Instructions:

  1. Prepare the Tart Shell: In a food processor, blend flour, sugar, and salt. Add cold butter and pulse until the mixture resembles coarse crumbs. Mix in the egg yolk and water until the dough forms. Wrap in plastic and chill for at least 30 minutes. Roll out dough and press into tart pans. Chill again for 20 minutes.
  2. Bake the Tart Shell: Preheat the oven to 375°F (190°C). Line the tart shells with parchment paper and fill with baking weights. Bake for 15 minutes, remove the weights and paper, and bake for another 10 minutes until golden. Let cool.
  3. Make the Custard Filling: In a saucepan, heat cream and milk until hot but not boiling. In a separate bowl, whisk together egg yolks, sugar, and vanilla. Gradually add the hot milk mixture to the egg yolks, stirring constantly. Return the mixture to the saucepan and cook over low heat, stirring until the custard thickens. Do not boil. Let cool slightly.
  4. Assemble the Tarts: Pour the custard into the cooled tart shells. Arrange the sliced peaches on top of the custard.
  5. Glaze and Finish: Warm the peach jam until runny, then brush over the peaches for a shiny glaze.
  6. Chill and Serve: Refrigerate the tarts until set, about 2 hours, before serving.
