Carmen’s Chicken and Cravy Recipe
PREPARING THE CHICKEN:
Season the chicken: Season both sides of the chicken pieces with salt, pepper and paprika.
Cook chicken: In a large skillet, heat the olive oil or butter over medium-high heat. Add the chicken and fry until golden brown and cooked through on both sides, about 6 to 8 minutes per side depending on thickness. Transfer the chicken to a plate and cover to keep warm.
MAKE SAUCE:
Form roux: In the same pan, melt 2 tablespoons butter.Add flour, stirring constantly, until mixture is golden brown (about 1-2 minutes). This roux will thicken the sauce.
Add liquids: Gradually add the chicken broth, making sure there are no lumps. Add onion powder, garlic powder, salt and pepper. Simmer the mixture, stirring frequently, until thickened, about 5 minutes. For a creamier sauce, add cream or milk and heat.
Combine: Return the chicken to the pan and pour the sauce over the pieces. Simmer for another 2-3 minutes to ensure the chicken is heated through and infused with the flavors of the sauce.
Serving Suggestions:
Serve chicken with Carmen sauce on a bed of fluffy rice, creamy mashed potatoes, or buttery noodles. The sauce is the star, so make sure you have enough for everyone.A side of steamed green beans, broccoli, or a crisp salad can provide a fresh contrast to the rich flavors of the dish.
Tips:
For thicker sauce: If you prefer a thicker sauce, let it simmer for a few more minutes until the desired consistency is reached. You can also add a little more flour, but be sure to cook it thoroughly to avoid the raw flour taste.
