Homemade Potato Chips

Ingredients:

  • 2 large potatoes (russet or Yukon Gold)
  • 2 cups vegetable oil (for frying) or cooking spray (for baking)
  • Salt to taste
  • Optional: paprika, garlic powder, or other seasonings for flavor

Instructions:

For Fried Potato Chips:
  1. Slice the Potatoes:
    • Wash and peel the potatoes (if desired).
    • Using a mandoline slicer or a sharp knife, slice the potatoes very thin (about 1/16 inch or 1.5 mm thick).
  2. Soak and Dry:
    • Soak the potato slices in cold water for 30 minutes to remove excess starch, which helps them crisp up.
    • Drain and pat the slices completely dry with paper towels.
  3. Heat the Oil:
    • Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
  4. Fry the Potatoes:
    • Fry the potato slices in small batches to avoid overcrowding.
    • Cook for 2–3 minutes or until golden brown, flipping occasionally.
  5. Drain and Season:
    • Remove the chips with a slotted spoon and place them on paper towels to drain excess oil.
    • Sprinkle with salt or your favorite seasoning while still hot.

For Baked Potato Chips:
  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
  2. Prepare the Potatoes:
    • Follow steps 1 and 2 above to slice and dry the potatoes.
  3. Season and Arrange:
    • Toss the potato slices with a little olive oil and arrange them in a single layer on the baking sheet.
    • Sprinkle with salt or seasoning.
  4. Bake:
    • Bake for 10–15 minutes, flipping the slices halfway through, until golden and crispy.
  5. Cool and Serve:
    • Let the chips cool slightly and enjoy!
