Creamy Potato Salad with Sausages
Ingredients:
For the Potato Salad:
- 4-5 medium potatoes (peeled and cubed)
- 2-3 pickles (diced)
- 1/2 cup mayonnaise
- 1/4 cup sour cream (optional, for extra creaminess)
- 1 teaspoon mustard (Dijon or yellow)
- 1/2 small onion (finely diced)
- 1 hard-boiled egg (chopped, optional)
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
For the Sausages:
- 4-6 sausages (Frankfurters, bratwurst, or any preferred type)
- Water for boiling or oil for grilling
Instructions:
- Cook the potatoes:
- Place the cubed potatoes in a pot of salted water.
- Bring to a boil and cook for 10-12 minutes, or until tender but not mushy.
- Drain and let the potatoes cool completely.
- Prepare the potato salad:
- In a large bowl, mix the mayonnaise, sour cream, mustard, salt, and pepper.
- Add the cooled potatoes, diced pickles, onion, and chopped egg (if using).
- Mix gently to combine, ensuring the potatoes are well coated in the dressing.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Cook the sausages:
- If boiling, bring a pot of water to a simmer (not boiling), then add the sausages and cook for 5-7 minutes.
- If grilling, lightly oil the sausages and cook on a medium grill, turning frequently, until browned and heated through.
- Assemble and serve:
- Serve the creamy potato salad alongside the warm sausages.
- Garnish the potato salad with fresh parsley if desired
